We are in the process of planting onions here in the Stockton area. Some of the varieties we will be planting are Cimarron, Caballero, Vaquero, Granero and Pandero. All of our onions are grown within a twenty-mile radius of our packing facility and are packed here in the shed. We harvest an estimated 750,000 pounds of onions per day. We harvest all of our onions at night because the optimal temperatures reduce bruising and produces a better packed product.
