When growing peppers we strive for perfection, and that is why we primarily only pack “chain store quality.” Farming many hundreds of acres, we are always looking to increase year to year. You may have noticed that we only pack under the Henry’s label and that’s because we are a bit of obsessed about consistency.

The supermarket consumer is expecting a certain shape and conformity that typically has no correlation to flavor, and as it stands, this is the scope of the public demand. We look for a consistent straight angle with a thick cell wall and bright green luminosity when we pack peppers. The end effect is to be able to set the bell pepper on a table and have it stand up by itself while looking straight.

Although challenging in its application, this simple and direct mantra has underscored our reputation as having California’s best bell peppers from many of our buyers within the industry.

The size is determined by how many peppers can fit in a box.
The counts for the different sizes are:
  • Medium................................70-75

  • Large................................60-65

  • X-Large................................50-55

  • XX-Large................................38-45
