Chocolate Cherry Muffins

Ingredients

  • 1 3/4 cup whole wheat flour
  • 2/3 cup unsweetened cocoa powder
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, melted and cooled
  • 2 large eggs, lightly beaten
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • 1 cup fresh cherries, pitted and coarsely chopped
  • 3/4 cup chocolate chips

Instructions

STEP 1

Preheat oven to 374 degrees and grease 12-14 muffin tins, or line with paper liners.

STEP 2

Combine first 6 ingredients in a large bowl and whisk to combine.

STEP 3

Stir in chocolate chips and cherries.

STEP 4

If using buttermilk powder, add it in here with dry ingredients.

STEP 5

Add melted butter, beaten eggs, buttermilk and vanilla all at once. Stir until ingredients are just combined. Do not over-mix.

STEP 6

Divide batter among prepared muffin tins. Bake for 18-20 minutes or until a tester inserted in the middle comes out clean.
Let cool in pan for 5 minutes and then remove to a wire rack to cool completely.
